summer italian stew?

We got this recipe from Uncle Charlie when we were out in Monterey.  He got it from someone he works with. 

It doesn’t have a name but it’s got Italian sausages, yellow squash and zucchini which make me think of summer hence the title.

ingredients:
1lb Italian sausage
1lb Hot Italian sausage
2 cans Rotel undrained
2 cans (28oz) diced tomatoes with Italian seasoning
2 cans (15.5oz) chickpeas drained and rinsed
2-3 yellow squash sliced
2-3 zucchini sliced
1 large onion diced
2-3 cans vegetable broth

Brown sausage (breaking it up).  Sauté vegetables.  Combine all ingredients.  Bring to a boil and reduce heat.

Without getting sausage links and removing the casings, I couldn’t get hot Italian sausage so I just used 2lbs of regular and it didn’t change the flavor dramatically.  I also didn’t have vegetable broth so i just used chicken broth I had on hand until there was enough liquid to cover everything well.

It was pretty darn tasty!  And it makes a ton.  We put some in the freezer to see how it freezes.
